Brill With Fresh Lychees

Ingredients
  Fillets 4
  Salt To Taste
  Pepper To Taste
  White wine 4 Tablespoon
  Grated carrot 1 Large
  Saffron 1 Teaspoon, dried
  Lychees 20 , peeled and pitted
  Sour cream 3 Tablespoon (Creme Fraiche)
Directions

Rinse the fish fillets under plenty of cold running water and pat dry on kitchen paper.
Put 2 fillets side by side in an oval dish.
Season with salt and pepper.
Add the white wine.
Cover and microwave on HIGH for 3 minutes.
Remove the cooked fish fillets with a slotted spatula and replace with the uncooked ones, seasoning again with salt and pepper.
Cover and microwave on HIGH for 3 minutes.
Remove the fish fillets and add to the first.
Cover with aluminum (aluminium) foil to keep warm.
Pour the cooking liquid from the fish into a bowl.
Add the grated carrot and saffron.
Season lightly with salt and pepper.
Cover and microwave on HIGH for 4 minutes.
Add the lychees to the carrot mixture and stir in the sour cream (creme fraiche).
Stir well, cover and microwave on HIGH for 1 minute.
Pour over the fish
