Fruit 'N Rice Stuffing

Ingredients
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Finely chopped onion 1⁄4 Cup (4 tbs)
  Finely chopped celery 1⁄4 Cup (4 tbs)
  Finely chopped dried apricots 1⁄2 Cup (8 tbs)
  Chopped dried prunes/Raisins 1⁄2 Cup (8 tbs) (Medium Sized Fruit)
  Orange juice/Chicken broth 1 1⁄2 Cup (24 tbs)
  Sugar 3 Tablespoon
  Chopped apple 1⁄2 Cup (8 tbs)
  Cooked rice 1 1⁄4 Cup (20 tbs)
Directions

Place butter, onion and celery in a 2 qt.glass casserole dish.
Cover and microwave 3 to 4 minutes.
Add dried fruit, orange juice and sugar.
Cover and microwave 6 minutes.
Add chopped apple and continue cooking 3 to 4 minutes.
Stir in rice.
Cover and let stand 5 to 10 minutes.
This makes an excellent stuffing for duckling or pheasant.
