Fruit 'N Rice Stuffing
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Finely chopped onion||1⁄4 Cup (4 tbs)|
|Finely chopped celery||1⁄4 Cup (4 tbs)|
|Finely chopped dried apricots||1⁄2 Cup (8 tbs)|
|Chopped dried prunes/Raisins||1⁄2 Cup (8 tbs) (Medium Sized Fruit)|
|Orange juice/Chicken broth||1 1⁄2 Cup (24 tbs)|
|Chopped apple||1⁄2 Cup (8 tbs)|
|Cooked rice||1 1⁄4 Cup (20 tbs)|
Place butter, onion and celery in a 2 qt.glass casserole dish.
Cover and microwave 3 to 4 minutes.
Add dried fruit, orange juice and sugar.
Cover and microwave 6 minutes.
Add chopped apple and continue cooking 3 to 4 minutes.
Stir in rice.
Cover and let stand 5 to 10 minutes.
This makes an excellent stuffing for duckling or pheasant.
