Jellied Prune Whip
|Orange gelatin packet/Lemon gelatin packet||3 Ounce (1 Package)|
|Boiling water||1 Cup (16 tbs)|
|Cold water||3⁄4 Cup (12 tbs)|
|Grated orange rind||1⁄4 Teaspoon|
|Sugar||1⁄4 Cup (4 tbs)|
|Chopped cooked prune pulp||1 Pound (About 1 1/2 Cup Dried Prunes)|
Dissolve gelatin in boiling water.
Add cold water, salt, and orange rind.
Place bowl of gelatin in a larger bowl of ice and water.
Stir until slightly thickened; then whip until fluffy and thick.
Add sugar to prune pulp and fold into whipped gelatin.
Pile lightly in sherbet glasses.
Chill until set at least 1 hour.
