Fresh Fruit Vinegar
|Strawberries/Raspberries / peaches||6 Cup (96 tbs)|
|White wine vinegar||1 Quart|
|Sugar||4 Cup (64 tbs)|
Place fruit in 3 quart glass bowl and crush with potato masher.
Add vinegar, cover tightly and let stand in cool area for at least 24 hours.
Pour through strainer into large nonaluminum pot, pressing to extract as much fruit pulp and juice as possible (you should get 6 cups).
Stirring constantly, bring to a boil.
Reduce heat and simmer, stirring, exactly 5 minutes.
Pour into glass containers and cap tightly.
