Molded Fruit Medley
|Unflavored gelatin||1 Tablespoon (1 envelope)|
|Sugar||1⁄4 Cup (4 tbs)|
|Hot water||1 1⁄2 Cup (24 tbs)|
|Fresh lemon juice/Lime juice||1⁄4 Cup (4 tbs)|
|Chopped mixed fruit||2 Cup (32 tbs) (fresh canned or frozen)|
|Whipped cream||1⁄4 Cup (4 tbs)|
Mix together gelatin, sugar and salt.
Add hot water, stirring until gelatin is dissolved.
Stir in lemon juice.
Chill until mixture is the consistency of unbeaten egg white.
Fold in fruit.
Turn into a 3-cup mold or individual molds and chill until firm.
Unmold and serve plain or with whipped cream.
