Prepare 1 cup sieved fruit pulp such as apple sauce, stewed prunes or apricots, fresh or canned peaches.
Beat 3 egg whites until quite stiff.
Add sugar to taste, then the fruit, beating all of the while.
Chill and serve plain, with cream or custard sauce.
Or pour into a buttered baking dish and bake in a moderate oven of 375°F, until center is firm (about 30 min.).
