Orange Bran Puffins
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Baking soda||3⁄4 Teaspoon|
|Granulated sugar||3 Tablespoon|
|Bran||1 Cup (16 tbs)|
|Orange zest||1 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
In a large bowl, combine flour, baking powder, baking soda, salt and sugar.
Stir in bran and grated orange zest.
In another bowl, beat egg slightly with buttermilk and melted butter.
Add all at once to the flour mixture and stir just until moistened.
Do not overmix.
The batter will be lumpy.
3 Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 15 minutes or until golden brown.
Best served warm.
HINT: When making iced tea, add a little hot water and then cold water so that the crystals will dissolve more completely.
