Apple Walnut Oat Bran Muffins
|All purpose flour||1 Cup (16 tbs)|
|Whole wheat flour||1 Cup (16 tbs)|
|Oat bran||1 Cup (16 tbs)|
|Baking powder||1 Tablespoon|
|Baking soda||1 1⁄2 Teaspoon|
|Chopped walnuts||1 Cup (16 tbs)|
|Grated apple||1 Cup (16 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Buttermilk||1 1⁄2 Cup (24 tbs)|
|Vegetable oil||5 Tablespoon|
In a large bowl, combine all-purpose flour, whole-wheat flour, oat bran, baking powder, baking soda, cinnamon, walnuts and apple.
In another bowl, dissolve brown sugar in buttermilk.
Add egg whites and oil, beating lightly with a fork until well blended.
Add to dry ingredients, stirring just until moistened.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 20 minutes.
