Mayberry Fruit Squares
|Mixed dried fruit/1/2 pound mixed dried fruit||2 Cup (32 tbs)|
|Lemon juice||1⁄2 Tablespoon|
|Sea salt||1⁄4 Teaspoon|
|Boiling water||1 Cup (16 tbs)|
|Lemon rind||1⁄2 Teaspoon|
|Oat flakes||1 1⁄2 Cup (24 tbs)|
|Whole wheat pastry flour||1 Cup (16 tbs)|
|Unrefined oil||1⁄2 Cup (8 tbs)|
Combine the fruit with the lemon juice, grated rind, salt, and boiling water in saucepan.
Simmer 5 minutes.
Meanwhile, mix the oat flakes, pastry flour, and salt.
Rub the oil in by hand until well mixed.
Sprinkle with water and mix lightly.
Press half the oat mixture into an 8 inch square pan.
Chop the fruit and spread over the crust.
Then sprinkle the rest of the oat mixture over the fruit and press lightly.
Bake 25 minutes at 350Â°.
Cut into squares.
