Mayberry Fruit Squares

Ingredients
  Mixed dried fruit/1/2 pound mixed dried fruit 2 Cup (32 tbs)
  Lemon juice 1⁄2 Tablespoon
  Sea salt 1⁄4 Teaspoon
  Boiling water 1 Cup (16 tbs)
  Lemon rind 1⁄2 Teaspoon
  Oat flakes 1 1⁄2 Cup (24 tbs)
  Whole wheat pastry flour 1 Cup (16 tbs)
  Unrefined oil 1⁄2 Cup (8 tbs)
  Water 3 Tablespoon
Directions

Combine the fruit with the lemon juice, grated rind, salt, and boiling water in saucepan.
Simmer 5 minutes.
Cool.
Meanwhile, mix the oat flakes, pastry flour, and salt.
Rub the oil in by hand until well mixed.
Sprinkle with water and mix lightly.
Press half the oat mixture into an 8 inch square pan.
Chop the fruit and spread over the crust.
Then sprinkle the rest of the oat mixture over the fruit and press lightly.
Bake 25 minutes at 350°.
Cool.
Cut into squares.
