Spiced Pickled Fruits
|Dried prunes||1 Pound|
|Sweet cherries/Montmorency cherries||2 Cup (32 tbs)|
|Granulated sugar||7 Cup (112 tbs)|
|Cider vinegar||4 Cup (64 tbs)|
|Water||3 Cup (48 tbs)|
|Whole cloves||1 Tablespoon|
Soak prunes in cold water several hours, and drain; pick over cherries, and wash.
Combine next 3 ingredients in large kettle; tie spices in cheesecloth bag, and add.
Bring to boil, and simmer 5 minutes.
Add all fruit to kettle; simmer gently 15 minutes.
Remove from heat, cover kettle and let stand overnight.
Next morning bring to boil; remove peaches carefully, and pack in hot sterilized jars; add prunes and cherries to fill spaces around peaches.
Boil syrup hard 20 minutes; discard spice bag, and pour liquid into jars, covering fruit completely.
Store in cool dry place.
