Fancy Fruit Medley
|Canned unsweetened pineapple chunks||16 Ounce|
|Vanilla extract||1⁄2 Teaspoon|
|Plain low fat yogurt||1⁄3 Cup (5.33 tbs)|
|Seedless green grapes||1 Cup (16 tbs)|
|Halved strawberries||1 Cup (16 tbs)|
Drain pineapple, reserving juice.
Set pineapple aside.
Combine pineapple juice, cornstarch, and sugar in a saucepan; cook over medium heat, stirring constantly, until mixture comes to a boil.
Cook 1 minute, stirring constantly.
Stir in vanilla; cool 10 minutes.
Stir in yogurt; fold in fruit.
Chill several hours.
