Pineapple-Wine Supreme

Ingredients
  Canned pineapple chunks 7 (no. 2)
  Gelatin 2 Tablespoon
  Sugar 1⁄2 Cup (8 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Pecan 3⁄4 Cup (12 tbs), broken
  Sherry 1 1⁄4 Cup (20 tbs)
Directions

Drain pineapple; reserve juice.
Soften gelatin in 1/2 cup cold water.
Add enough water to reserved juice to make 11/4 cup:; liquid.
Bring juice mixture to a boil; add softened gelatin.
Stir until dissolved.
Com- bine pineapple chunks, sugar, lemon juice, pecans and sherry; pour into rrold.
Pour enough gelatin over to hold in place.
Chill until firm.
Pour in remaining gelatin mixture.
Chill until firm.
