Cherry Coconut Slice
|All purpose flour||1 Cup (16 tbs), sieved|
|Butter||1⁄2 Cup (8 tbs)|
|Icing sugar||2 Tablespoon|
|Brown sugar||1 1⁄2 Cup (24 tbs)|
|Eggs||2 , beaten well|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
|Maraschino cherries||8 Ounce, drained and quartered|
|Coconut flakes||1⁄2 Cup (8 tbs) (fine)|
|Refined flour||2 Tablespoon|
|Baking powder||1⁄2 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
1. Preheat an oven to 175C (350 F).
2. In a medium sized bowl, combine all ingredients required for topping and mix well. Keep aside.
In a medium sized bowl, combine flour, butter and icing sugar. Mix well.
Transfer mixture on to a 9 inch X 9 inch baking pan and spread evenly.
Bake in pre heated oven for 10 minutes.
Once baked, remove from oven and top with prepared topping mixture.
Once again, bake at same temperature for 20 to 25 minutes.
When cool, top with butter icing or flavoured butter icing.
Use cherry juice and almond extract to flavoour butter icing or use flavours as desired.
