Heat sugar and water in a small saucepan over low heat, stirring until sugar is dissolved.
Remove from heat; cool.
Pour sugar syrup into a 2-quart glass jar.
Add desired fruit and vodka; stir gently.
Cover the jar with a tight-fitting lid.
Let stand (steep) in a cool dark place for the time suggested for each fruit, swirling every few days to distribute the ingredients.
To strain, set a wire strainer, lined with several thicknesses of 100-percent-cotton cheesecloth, over a large bowl or wide-mouth jar.
Pour fruit mixture through.
If liquid needs further clarifying, pour through a coffee funnel lined with a paper filter.
Transfer the strained liquid to a clean, dry bottle using a funnel.
Seal bottle tightly and label with contents so you'll be able to identify the flavor.
Store at room temperature.
Orange Cordial: Remove a thin layer of peel from 3 oranges using a sharp knife or vegetable peeler.
Take care to avoid the bitter white part.
Use peel for the fruit in the cordial recipe (reserve remaining oranges for another use).
Steep mixture for 3 weeks.
