Papaya Catsup

Ingredients
  Whole allspice 4 Tablespoon
  Whole cloves 3 Tablespoon
  Mustard seed 3 Tablespoon
  Cinnamon stick 1
  Ginger root 1 Medium, chopped
  Cayenne pepper 1⁄2 Teaspoon
  Papaya pulp 14 Cup (224 tbs), strained
  Onion 1 Large, sliced
  Vinegar 1 1⁄3 Cup (21.33 tbs)
  Sugar 6 Tablespoon
  Salt 2 Tablespoon
  Tartaric acid 1⁄4 Teaspoon
Directions

MAKING
1) In a cheesecloth bag add allspice, cloves, mustard seed, cinnamon, ginger root, and cayenne pepper. Tie the mouth of the bag.
2) In a large saucepot put papaya pulp, onion and the cheesecloth bag.
3) Cook on low heat for 40 minutes.
4) Mix vinegar, sugar, salt, and tartaric acid.
5) Continue to cook for 1 hour until thick.
6) Take out the spice bag.

SERVING
7) Pour into hot sterilized jars and seal with melted paraffin.
