Low Calorie Fruit Mold

Ingredients
  Unflavored gelatin 1 Tablespoon
  Cold water 2 Tablespoon
  Boiling water 1⁄4 Cup (4 tbs)
  Low calorie ginger ale/Lemon lime soda 1 1⁄2 Cup (24 tbs)
  Lemon juice 1 Tablespoon
  Fruit 2 Cup (32 tbs) (Fresh Or Drained Canned)
  Cottage cheese 2 Tablespoon
  Grated orange peel 1 Tablespoon
Directions

Soften gelatin in cold water.
Add boiling water and stir until dissolved; cool.
Stir in ginger ale and lemon juice; refrigerate until slightly thickened.
Fold in fruit and pour into a 4-cup moldor4 individual molds.
Refrigerate overnight.
Serve with cottage cheese and garnish with grated orange peel.
Makes 4 servings.
