Iced Kiwi Fruit Sabayon

Ingredients
  Kiwi fruit 48 Ounce (Large, Four 350 Gram/12 Ounce Each Pieces)
  Icing sugar 4 Ounce (100 Gram)
  Water 60 Milliliter (4 Tablespoon)
  Grated lime rind 1
  Lime 1 , juiced
  Vodka 30 Milliliter (2 Tablespoon)
  Egg yolks 4 (At Room Temperature)
  Whipping cream 8 Fluid Ounce (250 Milliliter)
  Kiwi fruit slices 4
Directions

GETTING READY
1. Slice the kiwi fruit
2. Remove the flesh and then cut it into 1 cm (1/2 inch) cubes
3. In a large heatproof dish, place the flesh of the fruit
4. Cover the dish with a cling film and then microwave on HIGH for 2 minutes
5. Puree the fruit completely

MAKING
6. In a medium heatproof dish, tip in the icing sugar and the water.
7. Heat this uncovered on HIGH for 2 minutes
8. Stir this and microwave on HIGH for one more minute
9. Cool this syrup on ice
10. Then add in the fruit puree, the lime rind, lime juice and the vodka and then mix well
11. Add 2 tablespoons of the mixture to the egg yolks
12. Whisk this mixture well with an electric beater till you have a thick creamy mixture
13. When the mixture is thick and creamy, add the rest of the fruit puree to form a thick mousse-like dish
14. In a separate dish, add the cream
15. Whip it completely till it is a thick mixture
16. Turn the mixture into a shallow heatproof dish
17. Cover, seal and freeze chill for 2 1/2 - 3 hours, or until firm.

SERVING
18. Serve cold with slices of fresh fruit.
