Shoulder Of Lamb With Raisin And Apricot Stuffing

Ingredients
  Onion 1 , peeled and chopped
  Butter 15 Gram
  Canned apricots 219 Gram
  Fresh white breadcrumbs 50 Gram
  Finely chopped parsley 36 Milliliter (2 Spoons, 18 Milliliter Each)
  Raisins 50 Gram
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper To Taste
  Egg 1 , beaten
  Boned lamb shoulder 1 Small
  Dripping 1 Tablespoon
Directions

MAKING
1.Take a small pan, heat butter in it.
2.Saute onions until golden brown.
3.Strain and chop apricots after keeping the juice aside.
4.Combine onions with apricots, breadcrumbs, parsley, raisins and seasoning.
5.Bring the mixture together with whisked eggs.
6.Place the mixture in roasting tin and bake for 1 1/2 hours - 2 hours until soft.

SERVING
7.Serve warm.

Tip
The dish can be stored for a month.
