John Dory With Orange And Mushroom Stuffing

Ingredients
  John dory fillets 4 Pound, with heads removed (4 Pieces, 1 Pound Each)
  Oranges 2
  Finely chopped shallots 2 Ounce (50 Gram)
  Butter 2 Ounce (50 Gram)
  Sliced mushrooms 8 Ounce (225 Gram)
  White wine 2 Fluid Ounce (50 Milliliter)
  Salt To Taste
  Pepper To Taste
  Double cream 8 Fluid Ounce (225 Milliliter)
  Chopped parsley 2 Tablespoon (To Garnish)
Directions

GETTING READY
1. Prepare the orange by peeling it with a potato peeler.
2. Blanch the strips of the peel that have been collected
3. Shred the peels and then set them aside
4. Section the oranges and set aside

MAKING
5. To a large saucepan, heat the butter
6. Add the butter to the pan
7. Heat till the butter is soft and then add in the mushrooms
8. Cook the mushrooms till done
9. Add the shredded orange peel and half the orange sections
10. Season the mix to taste
11. Stuff the Dory with this mixture and ensure that the mixture is pressed into the fish
12. In a shallow baking dish, place the fish and tip the wine around it
13. Season and cover the dish with the lid of foil
14. Bake in a cool oven (150° C / 300° F / Gas Mark 2) for 20-30 minutes until cooked.

FINALIZING
15. Remove the fish to a serving dish
16. Take off the top skin just before serving
17. Reduce the pan juices by one-third over a high heat.
18. Add the double cream
19. Taste and season the mix
20. Just before serving, tip the sauce around the fish

SERVING
21. Decorate the fish with the orange sections and parsley
