|Caster sugar||1 Tablespoon|
|Sweet white wine/Sherry||2 Tablespoon|
|Kiwi fruit||1 , peeled and sliced|
1) In a bowl, add the egg yolk, sugar and wine, blend well.
2) Keep the bowl over a pan of simmering water, whisking continuously until the mixture is light, thick and doubled.
3) On a small shallow dish, place the slices of kiwi fruit and pour in the egg yolk mixture. 4) Brown the top under a preheated hot grill for 1-2 min.
5) Garnish with a few kiwi slices and serve.
