Fruit And Pasta Refresher
|Rotini||8 Ounce, uncooked|
|Canned pineapple chunks||20 Ounce, drained (1 Can)|
|Melon||2 Cup (32 tbs), cubed|
|Seedless red grapes||1 Cup (16 tbs), halved|
|Celery||1 Cup (16 tbs), sliced|
|Low fat vanilla yogurt||1 Cup (16 tbs)|
|Reduced calorie mayonnaise||1⁄4 Cup (4 tbs)|
|Ground ginger||1⁄2 Teaspoon|
1. In a pan add water, cook the pasta as per package directions and drain well after rinsing in cold water.
2. In a large bowl, stir together pasta, fruit, celery, yogurt, mayonnaise and ginger.
3. Serve after garnishing with parsley and chilling it covered.
