This rich honeyed fruit mince is truly healthy and delicious with the goodness of a variety of fruits in honey. Throw in more of your favorite fruits to suit your individual palate!
Ingredients
  Raisins 6 Ounce
  Dried figs 2 Ounce
  Dried apricots 2 Ounce
  Honey 2 Tablespoon
  Nutmeg 1 Teaspoon
  Apple juice 2 Tablespoon
  Crystallised ginger 1 Ounce
  Lemon 1⁄2 (grated rind and strained juice)
  Sultanas 1⁄4 Pound
  Glace cherries 2 Ounce
  Mixed peel 2 Ounce
  Cinnamon 1 Teaspoon
  Salt To Taste
Directions

Mix all the fruit well together, after cleaning and chopping it.
Bring just to boiling point the honey, spices, salt, rind and juices.
Pour over the fruits and stir well.
Cool and pack into jars.
This can be made 2 weeks before use.
