Pineapple Coconut Cookies

Ingredients
  Sugar 1⁄2 Cup (8 tbs)
  Brown sugar 1⁄4 Cup (4 tbs)
  Margarine 1⁄4 Cup (4 tbs)
  Shortening 1⁄4 Cup (4 tbs)
  Egg 1
  Vanilla 1 Teaspoon
  Flour 1 1⁄4 Cup (20 tbs)
  Salt 3⁄4 Teaspoon
  Soda 1⁄2 Teaspoon
  Ginger 1⁄4 Teaspoon
  Coconut 1 Cup (16 tbs)
  Crushed pineapple 1⁄2 Cup (8 tbs), drained
  Nuts 1⁄2 Cup (8 tbs), chopped
Directions

Cream first six ingredients together until light and fluffy.
Stir dry ingredients together and beat into creamy mixture.
Stir in coconut, pineapple and nuts.
Drop teaspoon-fuls 2 inches apart on a greased cookie sheet.
Bake at 375 degrees for 8-10 minutes.
Let stand 30 seconds on sheet after removing from oven, then cool on wire racks.
