Apple Nut Squares

Ingredients
  All purpose flour 3⁄4 Cup (12 tbs)
  Double acting baking powder 1 Teaspoon
  Egg 1
  Firmly packed dark brown sugar 2 2⁄3 Tablespoon (2 Tablespoons Plus 2 Teaspoons)
  Chunky style peanut butter 1⁄2 Cup (8 tbs)
  Vanilla extract 1 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Skim milk 1⁄4 Cup (4 tbs)
  Golden delicious apples 2 Small, cored, pared, and diced
Directions

Preheat oven to 350°F.
Onto sheet of wax paper or a paper plate sift together flour and baking powder; set aside.
In medium mixing bowl combine egg and sugar and, using an electric mixer, beat until thick; add peanut butter, vanilla, and cinnamon and beat until combined.
Add sifted flour alternately with milk, about 1/3 at a time, beating after each addition; stir in apple.
Spray an 8 x 8 x 2-inch baking pan with nonstick cooking spray; spread batter evenly in pan and bake until top is lightly browned, 30 to 35 minutes.
Remove pan to wire rack and let cool for 5 minutes; remove cake from pan and return to rack to cool completely.
Cut into sixteen 2-inch squares.
