Ingredients
  Peaches 2 , sliced
  Plums 2 , quartered
  Grapes 1 Cup (16 tbs), halved (Red / Green Colored)
  Apple juice 1 Cup (16 tbs)
  Quick cooking tapioca 2 Tablespoon
  Minced fresh mint/1/2 teaspoon dried mint 1 Tablespoon
  Maple syrup 1 Teaspoon
Directions

In a 1 1/2-quart casserole, combine the peaches, plums, grapes, juice, tapioca, mint, and maple syrup.
Cover with a lid and microwave on high for a total of 15 to 20 minutes, stirring twice during this time, until the tapioca is translucent and the fruit is tender.
Chill for at least 3 hours.
