|Grapes||1 Cup (16 tbs), halved (Red / Green Colored)|
|Apple juice||1 Cup (16 tbs)|
|Quick cooking tapioca||2 Tablespoon|
|Minced fresh mint/1/2 teaspoon dried mint||1 Tablespoon|
|Maple syrup||1 Teaspoon|
In a 1 1/2-quart casserole, combine the peaches, plums, grapes, juice, tapioca, mint, and maple syrup.
Cover with a lid and microwave on high for a total of 15 to 20 minutes, stirring twice during this time, until the tapioca is translucent and the fruit is tender.
Chill for at least 3 hours.
