Wash the dried fruits (peaches, apricots, prunes and pears) quickly in cold water, and put in a saucepan with the 1 3/4.
Soak 1 to 2 hours.
Heat to boiling and simmer gently, covered, for 15 to 20 minutes or until very tender.
Put fruit and liquid through a sieve or food mill.
Stir sugar and lemon juice into fruit puree and chill.
Whip cream until stiff and lightly fold in pureed fruits.
Serve chilled or frozen if desired.
