Stir 1/2 cup of the sugar into the berries and cook them about 10 minutes over low heat.
Sprinkle the gelatin over the water and add to the berries, stirring until dissolved.
When the berry mixture begins to thicken, stir in the egg whites beaten with the remaining 1/2 cup sugar and the lemon juice.
Pour into a mold which has been rinsed in cold water and chill until set.
Unmold on a chilled dessert plate and garnish with more fresh strawberries.
