Stir-Fried Pork With Lychees

Ingredients
  Fatty pork 1 Pound (450g, such as belly pork)
  Hoi sin sauce 30 Milliliter (2 tbsp)
  Spring onions 4 , sliced
  Lychees 6 Ounce, peeled, stoned and cut into slivers (175 g)
  Salt To Taste
  Ground black pepper To Taste
  Lychees 3 (to garnish)
  Fresh parsley sprigs 3 (to garnish)
Directions

1. Cut the pork into bite-sized pieces.
2. Pour the hoi-sin sauce over the pork and marinate for 30 minutes.
3. Heat the wok, then add the pork and stir-fry for 5 minutes until crisp and golden. Add the spring onions and stir-fry for a further 2 minutes.
4. Scatter the lychee slivers over the pork, and season well with salt and pepper. Garnish with fresh lychees and parsley, and serve.
