Lychee Appetizer

Ingredients
  Canned lychee fruit 20 Ounce, drained (1 can, 565 gram)
  Salted cashews 15 Milliliter, finely chopped (1 tablespoon)
  Crabmeat 2 1⁄2 Ounce (75 gram, canned or freshly cooked)
  Mayonnaise 15 Milliliter (1 tablespoon)
  Light soy sauce 1 Teaspoon
  Green onion 1 , finely cut
  Lemon juice 2 Teaspoon, strained
  Red ginger slices/Red pepper 1 Tablespoon (for garnish)
  Shredded lettuce 1 Cup (16 tbs)
Directions

1 Combine cashews, crabmeat, mayonnaise, light soy sauce, green onion and lemon juice. Pack into lychee fruit.
2 Top each with a thin slice of red ginger or red pepper. Arrange on finely shredded lettuce and serve chilled.
