Ginger N Fruit Cookies

Ingredients
  Self-raising flour 7 1⁄2 Ounce, sifted and husks returned (1 1/2 Cup, 235 Gram)
  Brown sugar 1 1⁄2 Ounce (1/4 Cup, 45 Gram)
  Dried mixed fruit 3 Tablespoon, chopped
  Chopped glaced ginger 1 Tablespoon
  Egg whites 3 , lightly beaten
  Skim milk 3 Fluid Ounce (1/3 Cup, 90 Gram)
  Olive oil 2 Tablespoon
  Glace cherries 9 , halved
Directions

1. Place flour, sugar, fruit and ginger in a bowl and mix to combine.
2. Gradually stir in egg whites, milk and oil and mix well.
3. Place spoonfuls of mixture on a lightly greased baking tray, top with a cherry half and bake for 12-15 minutes or until golden. Transfer to wire racks to cool.
