Hot Summer Fruit Gratin
|Mixed summer fruits||1 Pound (Raspberries, Strawberries, Redcurrants, And Blackberries, 500 Grams)|
|Light rum||2 Tablespoon (For Flavoring)|
|Ground almonds||2 Ounce (60 Grams)|
|Egg||1 , separated|
|Double cream||4 Tablespoon|
|Caster sugar||1 Ounce (30 Grams)|
|Orange flower water||1 Teaspoon|
Divide the fruit between 4-6 ramekin dishes and pour 2 teaspoons rum into each.
Blend the almonds, egg yolk, cream, sugar and orange- flower water to a thick paste.
Whisk the egg white until stiff and gently fold it into the mixture.
Spoon the mixture over the fruit in the ramekins and stand them on a baking-sheet.
Bake at 230°C/450°F/Gas Mark 8 for 10 minutes.
I try to make an extra one (unnoticed!), for I find these delicious when cold.
