Orange Marmalade Suitable For Frozen Fruit

Ingredients
  Seville oranges 1 Pound (450 Gram)
  Water 1 Pint (600 Milliliter)
  Lemon 1
  Sugar 2 Pound, warmed (900 Gram)
Directions

Put the whole washed fruit (do not thaw if frozen) in the pressure cooker with the water.
Put on the lid and bring to high (15 lb) pressure.
Cook for 20 minutes.
Reduce pressure slowly.
Remove the fruit.
Allow the fruit to cool a little, then make sure that the peel is really soft by pressing it between the thumb and forefinger.
Then cut it up, using a knife and fork, and separate the pips at the same time.
Put the pips in the liquid in the cooker, put on the lid and bring to high (15 lb) pressure.
Cook for 5 minutes.
Reduce pressure slowly.
Strain the water and return it to the cooker.
Put in the cooked peel and sugar and stir over low heat until the sugar is dissolved.
Bring to the boil in uncovered cooker and boil rapidly, stirring all the time, until setting point is reached.
Remove the cooker from the heat.
Allow the contents to stand 10 minutes, then stir well, pot and cover.
