Papaya Skewers with Passion Fruit
|Passion fruit/Kiwi fruit||10 Small|
|Lime juice||30 Milliliter (2 Tablespoon)|
|Icing sugar||30 Milliliter (2 Tablespoon)|
|White rum||30 Milliliter (2 Tablespoon)|
1. Cut the papayas in half and scoop out the seeds. Peel and cut the flesh into even-size chunks. Thread the chunks on to six bamboo skewers.
2. Halve eight of the passion fruit or kiwi fruit and scoop out the insides. Puree for a few seconds in a blender or food processor.
3. Press the passion fruit or kiwi fruit pulp through a sieve and discard the seeds. Add the lime juice, icing sugar and white rum, then stir the coulis well until the sugar has dissolved.
4. Spoon a little of the coulis on to six serving plates. Place the skewers on top. Scoop the flesh from the remaining passion fruit or kiwi fruit and spoon it over. Decorate with lime slices.
