Poached Fruit

Ingredients
  Sugar 1 Cup (16 tbs)
  Water 2 Cup (32 tbs)
  Lemon juice 2 Tablespoon
  Lemon rind 2 Tablespoon
  Prepared fruit 3 Cup (48 tbs)
Directions

Put sugar, water, lemon juice and rind in a saucepan and bring to the boil.
Simmer for a few minutes.
Add the prepared fruit which should be cut into attractive strips or slices or cubes.
Keep at simmering point till the fruit is just soft but not mushy.
Soft fruits like pawpaw and mango should be just put into boiling syrup for a minute or two.
Remove from heat, drain off the syrup.
When cool, return fruit to syrup.
