Candied Fruit Peel
|Mixed grapefruit||2 Cup (32 tbs) (Orange, Lime, And Lemon Peel)|
|Cold water||1 1⁄2 Cup (24 tbs)|
|Sugar||1 Cup (16 tbs)|
|Water||1⁄2 Cup (8 tbs)|
Cut peel into very thin strips and place in a heavy pan.
Cover with cold water and bring slowly to a boil.
Reduce heat and simmer 10 to 1 2 minutes, drain and repeat process about 4 times or until peel has lost its bitter taste.
Combine sugar and 1/2 cup water, making a syrup, and add peel.
Boil gently until all syrup is absorbed and peel is transparent.
Watch carefully to keep from burning.
Spread on racks to dry.
