Stir Fried Tamarind Prawns

Ingredients
  Tamarind pulp 2 Tablespoon
  Water 4 Fluid Ounce (1/2 Cup / 125 Milliliter)
  Vegetable oil 2 Teaspoon
  Lemon grass stalks/2 teaspoons finely grated lemon rind 3 , finely chopped (Fresh)
  Fresh red chilies 2 , chopped
  Medium prawns 1 Pound, uncooked, shelled and deveined, tails intact (500 Gram)
  Green mangoes 2 , peeled and thinly sliced (Unripe)
  Chopped fresh coriander 3 Tablespoon (Cilantro)
  Brown sugar 2 Tablespoon
  Lime juice 2 Tablespoon
Directions

1. Place tamarind pulp and water in a bowl and stand for 20 minutes. Strain, reserve liquid and set aside. Discard solids.
2. Heat oil in a wok or frying pan over a high heat, add lemon grass or rind and chillies and stir-fry for 1 minute. Add prawns and stir-fry for 2 minutes or until they change colour.
3. Add mangoes, coriander, sugar, lime juice and tamarind liquid and stir-fry for 5 minutes or until prawns are cooked.
