Stir Fried Tamarind Prawns
|Tamarind pulp||2 Tablespoon|
|Water||4 Fluid Ounce (1/2 Cup / 125 Milliliter)|
|Vegetable oil||2 Teaspoon|
|Lemon grass stalks/2 teaspoons finely grated lemon rind||3 , finely chopped (Fresh)|
|Fresh red chilies||2 , chopped|
|Medium prawns||1 Pound, uncooked, shelled and deveined, tails intact (500 Gram)|
|Green mangoes||2 , peeled and thinly sliced (Unripe)|
|Chopped fresh coriander||3 Tablespoon (Cilantro)|
|Brown sugar||2 Tablespoon|
|Lime juice||2 Tablespoon|
1. Place tamarind pulp and water in a bowl and stand for 20 minutes. Strain, reserve liquid and set aside. Discard solids.
2. Heat oil in a wok or frying pan over a high heat, add lemon grass or rind and chillies and stir-fry for 1 minute. Add prawns and stir-fry for 2 minutes or until they change colour.
3. Add mangoes, coriander, sugar, lime juice and tamarind liquid and stir-fry for 5 minutes or until prawns are cooked.
