Cranberry & Orange Stuffing
|Cranberries||8 Ounce, thawed (If Frozen, 225 Gram)|
|Clear honey||2 Tablespoon|
|Butter/Margarine||2 Ounce (50 Gram)|
|Onion||1 Small, peeled, chopped|
|White breadcrumbs||8 Ounce (225 Gram)|
|Finely grated orange rind||1|
|Orange||1 , juiced|
|Eggs||2 , beaten (Size 3)|
|Mixed herbs||2 Teaspoon|
|Freshly ground black pepper||To Taste|
Place the cranberries in a pan with the clear honey and 1/4 pint/150 ml water.
Bring to the boil, simmer for 10 mins until just softened.
Drain and discard any remaining liquid.
Melt fat in pan and saute onion for 2-3 mins, or until softened.
Stir in the cranberries, breadcrumbs, orange rind and juice, eggs and herbs.
Mix well and use to stuff the turkey and make the stuffing balls.
