Cranberry & Orange Stuffing

Ingredients
  Cranberries 8 Ounce, thawed (If Frozen, 225 Gram)
  Clear honey 2 Tablespoon
  Butter/Margarine 2 Ounce (50 Gram)
  Onion 1 Small, peeled, chopped
  White breadcrumbs 8 Ounce (225 Gram)
  Finely grated orange rind 1
  Orange 1 , juiced
  Eggs 2 , beaten (Size 3)
  Mixed herbs 2 Teaspoon
  Freshly ground black pepper To Taste
  Salt To Taste
Directions

Place the cranberries in a pan with the clear honey and 1/4 pint/150 ml water.
Bring to the boil, simmer for 10 mins until just softened.
Drain and discard any remaining liquid.
Melt fat in pan and saute onion for 2-3 mins, or until softened.
Stir in the cranberries, breadcrumbs, orange rind and juice, eggs and herbs.
Season.
Mix well and use to stuff the turkey and make the stuffing balls.
