Apricot Dream Squares
|Crushed graham wafers||1 Cup (16 tbs)|
|Shredded coconut||1 Cup (16 tbs)|
|Melted butter||1⁄2 Cup (8 tbs)|
|Dried apricots||1 Cup (16 tbs)|
|Packed brown sugar||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Sifted all purpose flour||1⁄3 Cup (5.33 tbs)|
|Baking powder||1⁄2 Teaspoon|
Combine first five ingredients.
Add melted butter and mix well.
Reserve 1 cup for topping.
Pack remainder in bottom of a 9-inch square cake pan.
Bake for 10 minutes at 350F.
Cover apricots with water.
Simmer until tender, approximately 15 minutes.
Beat eggs until light and add brown sugar and lemon juice.
Stir in sifted dry ingredients and apricots.
Spread over bottom layer.
Sprinkle with topping.
Bake 30 to 35 minutes at 350F.
Cut in 20 squares.
