Ripe Jackfruit Fritters
|Ripe jackfruit||250 Gram, pulped|
|Self raising flour||250 Gram (Maida)|
|Finely grated coconut||100 Gram|
|Eggs||3 , well whisked|
|Cardamom powder||1⁄2 Tablespoon|
|Nutmeg powder||1⁄2 Tablespoon|
|Ghee||2 Cup (32 tbs) (For Deep Frying)|
Place the sugar and whisked eggs in a bowl and beat: till the sugar has dissolved.
Gently add the self-raising flour and mix well. Then add the fruit pulp, raisins and the cardamom-nutmeg powder and salt and mix vigorously. Allow to sit for 1/2 an hour.
Take a thick bottomed skillet or non-stick frying pan and fill it with 1/2" ghee. Heat over a medium flame. When hot, pour large spoonfuls of batter. Fry in small batches. Cook on both sides till golden brown and transfer onto a fancy glass dish.
Serve with tea.
