1 , cut into half and pulp removed
Red bell pepper
1 , seeded
1⁄2 , pulp removed, steamed
For the stuffing
Soaked sunflower seeds
1 Cup (16 tbs)
2 , chopped
3⁄4 , diced
1⁄3 Cup (5.33 tbs)
1⁄2 , diced
1 Cup (16 tbs), brewed
1. In a bowl, combine all the ingredients for the stuffing. Let them sit for about 20 to 30 minutes.
2. In a food processor, place the marinated mixture, add Ceylon cinnamon and sage, process for 20 seconds.
3. Serve in a red pepper, yellow zucchini, or in steamed acorn squash drizzled with mixture of coconut oil and honey.
