Apricot Bran Muffins

Ingredients
  Dried apricots 2⁄3 Cup (10.67 tbs)
  Sugar 2 Tablespoon
  All purpose flour 1 Cup (16 tbs)
  Sugar 1⁄3 Cup (5.33 tbs)
  Baking powder 2 1⁄2 Teaspoon
  Salt 3⁄4 Teaspoon
  Whole bran 1 Cup (16 tbs)
  Milk 3⁄4 Cup (12 tbs)
  Egg 1 , beaten
  Salad oil 1⁄4 Cup (4 tbs)
Directions

Pour boiling water over apricots to cover; let stand 10 minutes.
Drain well; mix with 2 tablespoons sugar.
Sift together dry ingredients.
Mix bran, milk, egg, and oil; add to flour mixture, stirring just rill moistened.
Gently stir in apricots.
Fill greased muffin pans 2/3 full.
Sprinkle tops with additional sugar.
Bake in hot oven (400°) about 25 minutes or till done.
