Fruit Kebabs With Almond Syrup And Amaretti Crumbs
|Pineapple cubes||1 Cup (16 tbs) (1 Inch, Fresh)|
|Brown sugar||2 Tablespoon|
|Almond extract||1⁄2 Teaspoon|
|Plum/Peach||1 Medium, cut into 4 wedges|
|Vegetable cooking spray||1|
|Amaretti cookies||16 Small, crumbled to make 2 tablespoons|
Combine first 4 ingredients in a bowl; stir well.
Let stand 15 minutes.
Remove fruit from bowl, reserving syrup.
Thread pineapple cubes and plum wedges alternately onto 2 (6-inch) skewers.
Place kebabs on grill rack coated with cooking spray; grill 4 minutes on each side or until thoroughly heated.
Drizzle reserved syrup over kebabs; sprinkle with cookie crumbs.
