Summer Fruit Platter
|Apples||2 , cored and cubed|
|Pears||2 , cored and cubed|
|Blueberries/Frozen blueberries||2 Cup (32 tbs), thawed|
|Pitted dried prunes||12 , cooked, drained|
|Lime honey dressing||1 Tablespoon|
Halve pineapple lengthwise; remove hard core.
Remove pineapple and cut into chunks.
Lightly toss pineapple, apples, pears, and blueberries together.
Pile into the shells.
Peel oranges and bananas; slice crosswise.
Arrange on a tray with filled shells and prunes.
Garnish with fresh mint.
