Fresh Fruits On A Skewer With Raspberry Mousse
|Unsweetened raspberries||2⁄3 Cup (10.67 tbs), thawed (Packed, Fresh Or Frozen)|
|Spa cream||1 Cup (16 tbs) (1/2 Recipe)|
|Pineapple cubes||8 (Fresh, 1 Inch Cubes)|
|Kiwi fruit||1 , peeled and cut into 8 pieces|
|Navel orange sections||8|
|Strawberries||8 , hulled|
Puree the raspberries in a blender or food processor, then pass through a fine sieve to strain out the seeds.
You will have about 1/2 cup puree.
Taste for sweetness.
Make the Spa Cream and fold it into the raspberry puree.
Divide the mousse among 4 chilled dessert plates.
Thread 4 bamboo skewers with 2 pieces each of pineapple, kiwi, orange, and strawberry.
Place a skewer of fruit on each plate, and serve at once.
