Curried Fruit & Nuts
|Tofu||8 Ounce, drained (Bean Curd)|
|Lemon yogurt||1⁄2 Cup (8 tbs)|
|Curry powder||1⁄2 Teaspoon|
|Canned water packed peach slices||16 Ounce, drained (1 Can)|
|Raisins||1⁄4 Cup (4 tbs)|
|Unsweetened shredded coconut||2 Tablespoon|
|Sliced almonds||2 Tablespoon, sliced|
|Curly endive/Other leaf lettuce||4|
|Poppy seed egg bread slice/Other egg bread||4|
In a medium bowl, break up tofu with a fork or pastry blender until crumbly.
Stir in yogurt and curry powder.
Add peach slices, raisins, coconut and almonds.
Stir gently to combine.
Arrange endive or lettuce on bread slices.
Spoon tofu mixture over endive or lettuce
