Wild Strawberry Fruit Whip

  Grated lemon rind 1 Tablespoon
  Sugar 1 Cup (16 tbs)
  Gelatin 1 Tablespoon
  Cold water 1⁄4 Cup (4 tbs)
  Boiling water 1⁄4 Cup (4 tbs)
  Lemon juice 3 Tablespoon
  Wild strawberries 1 Cup (16 tbs), crushed
  Vanilla 1 Teaspoon
  Egg whites 4 , beaten stiff

Stir rind into sugar.
Soak gelatin in cold water 10 minutes, then dissolve in boiling water.
Stir in sugar until dissolved.
Add lemon juice and fruit.
Add vanilla.
Chill 15 minutes.
Fold in whites, then pour into mold and chill thoroughly.
