Fruit N Yogurt Dazzler
|Honey||1⁄3 Cup (5.33 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Plain yogurt||16 Ounce (2 Cartons, 8 Ounces Each)|
|Sliced fresh strawberries||2 Cup (32 tbs)|
|Cantaloupe melon/Honeydew melon pieces / combination of both||2 Cup (32 tbs)|
|Seedless grapes||2 Cup (32 tbs), halved|
|Sliced banana||2 Cup (32 tbs)|
|Toasted coconut||2 Tablespoon|
|Fresh mint leaves||4|
In a small saucepan combine egg yolks, honey, water, and cornstarch; mix well.
Cook and stir over medium heat till mixture comes to a boil.
Reduce heat; cook and stir 2 minutes longer.
Spoon mixture into a small bowl or glass measure.
Cover with plastic wrap; chill the egg-yolk mixture, without stirring, several hours, At serving time, fold egg yolk mixture into yogurt, blending well.
In a large glass bowl or individual parfait glasses, layer fruit and yogurt mixture, ending with yogurt on top.
Sprinkle with toasted coconut and, if desired, garnish with whole fresh strawberries and fresh mint leaves.
Store any leftover yogurt mixture in refrigerator.
