Fresh Fruit Ginger Compote`
|Orange juice||1 1⁄3 Cup (21.33 tbs)|
|Honey||1⁄4 Cup (4 tbs)|
|Chopped candied ginger||2 Tablespoon|
|Orange zest||2 Teaspoon, grated|
|Prepared fruit||6 Cup (96 tbs)|
1. In a small saucepan, combine orange juice, honey and candied ginger. Bring to a boil; cook for 2 minutes. Remove from heat; stir in orange zest. Let cool to room temperature.
2. Arrange fruit in a serving bowl; pour ginger mixture over. Cover and refrigerate for up to 4 hours before serving.
