Fruit Filled Pineapple
|Fresh pineapple||1 Medium|
|Canned mandarin oranges||11 Ounce, drained (1 Can)|
|Shredded coconut||1 Cup (16 tbs)|
|Maraschino cherries||1⁄2 Cup (8 tbs), drained and cut in half|
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Almonds||1⁄2 Cup (8 tbs), sliced, toasted|
|Light rum||2 Tablespoon|
Cut leafy crown off pineapple; reserve for garnish, if desired.
Cut pineapple in half lengthwise.
Scoop out fruit, leaving 1/4-inch shell.
Remove woody core from fruit and discard.
Cut remaining fruit into chunks.
Combine pineapple chunks, oranges, coconut, cherries, marmalade, almonds, and rum; toss gently.
Place shells in 2-quart oblong glass baking dish.
Divide fruit mixture evenly between shells.
Cover with wax paper.
Microwave at high (10) 7 to 9 minutes or until heated through.
