Sweet Chocolate Covered Pineapple
|Quick no cook fondant||1⁄3 Cup (5.33 tbs)|
|Pineapple tidbits with juice||18 (Bite Size)|
|Dietetic chocolate coating||1 Ounce|
Drain pineapple tidbits thoroughly.
Place on paper towel, drain for 10 to 15 minutes and pat until slightly dry.
Form 1 tsp (5 mL) of fondant mixture around each pineapple tidbit.
Place on plate and refrigerate until firm.
Melt chocolate coating in a small custard cup over simmering water.
Using two forks, dip each pineapple bit, one at a time, in the chocolate.
Remove and place on waxed paper and allow to harden.
Store in refrigerator.
