Sweet Chocolate Covered Pineapple

Ingredients
  Quick no cook fondant 1⁄3 Cup (5.33 tbs)
  Pineapple tidbits with juice 18 (Bite Size)
  Dietetic chocolate coating 1 Ounce
Directions

Drain pineapple tidbits thoroughly.
Place on paper towel, drain for 10 to 15 minutes and pat until slightly dry.
Form 1 tsp (5 mL) of fondant mixture around each pineapple tidbit.
Place on plate and refrigerate until firm.
Melt chocolate coating in a small custard cup over simmering water.
Using two forks, dip each pineapple bit, one at a time, in the chocolate.
Remove and place on waxed paper and allow to harden.
Store in refrigerator.
